Corned Beef Stew

A hearty and flavourful dish perfect for a comforting meal. This halal version ensures everyone can enjoy this classic stew without compromising on taste or dietary preferences.


Ingredients:

For the Stew:

  • 400g halal canned corned beef
  • 2 medium-sized potatoes, peeled and cubed
  • 2 medium carrots, peeled and sliced
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup frozen peas
  • 1 cup sweet corn kernels
  • 2 cups beef or vegetable stock (ensure it’s halal-certified)
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin (optional, for extra depth)
  • Salt to taste
  • 2 tablespoons olive oil or vegetable oil

For Thickening (optional):

  • 2 tablespoons all-purpose flour or cornstarch mixed with 2 tablespoons water (slurry)

For Garnish:

  • Fresh parsley, finely chopped
  • Lemon wedges (optional, for a tangy kick)

Instructions:

  1. Prepare the Ingredients

    • Cube the potatoes and carrots. Chop the onion finely and mince the garlic. Set aside the peas and corn for later.
  2. Sauté the Aromatics

    • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and garlic. Sauté until fragrant and translucent, about 3 minutes.
  3. Add Corned Beef

    • Add the halal corned beef to the pot, breaking it up with a wooden spoon. Stir it with the onions and garlic, allowing it to brown lightly for 2–3 minutes.
  4. Incorporate the Vegetables

    • Add the cubed potatoes, carrots, sweet corn, and peas to the pot. Mix well to coat the vegetables in the flavours from the beef.
  5. Season and Simmer

    • Stir in the tomato paste, smoked paprika, black pepper, and cumin (if using). Pour in the halal beef or vegetable stock and bring the mixture to a gentle boil.
  6. Cook Until Tender

    • Reduce the heat to low, cover the pot, and let it simmer for 20–25 minutes, or until the potatoes and carrots are fork-tender. Stir occasionally to prevent sticking.
  7. Thicken the Stew (Optional)

    • If you prefer a thicker stew, stir in the flour or cornstarch slurry and let it simmer for an additional 5 minutes until the stew reaches your desired consistency.
  8. Taste and Adjust

    • Taste the stew and adjust the seasoning with salt and pepper, as needed.
  9. Garnish and Serve

    • Serve the stew in bowls, garnished with fresh parsley. Add a squeeze of lemon juice for extra brightness if desired. Pair with crusty bread or steamed rice for a complete meal.
