Golden Corn Fritters

Crispy on the outside and soft on the inside, these golden corn fritters are a treat for any occasion. Easy to make and packed with sweet bursts of corn, they’re bound to become a family staple.

Ingredients (Makes 12 fritters)

  • 1 cup fresh or canned corn kernels
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 2 spring onions, finely sliced
  • 1 egg, beaten
  • 1/4 cup milk
  • Vegetable oil, for frying
  • Sour cream or chilli sauce, for serving

Method

  1. Mix the Batter: In a large bowl, combine the flour, baking powder, and a pinch of salt. Stir in the corn, spring onions, egg, and milk until a thick batter forms.
  2. Fry to Perfection: Heat a thin layer of vegetable oil in a skillet over medium heat. Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of a spoon.
  3. Flip and Fry: Cook for 2–3 minutes per side, or until golden brown and crisp. Drain on a plate lined with paper towels.
  4. Serve Warm: Arrange the fritters on a platter and serve with sour cream or chilli sauce on the side.

Cook’s Note

For a spicy kick, add chopped jalapeños to the batter. These fritters can also be baked at 200°C for a healthier alternative.
